My fusion of Chinese medicine, Pho and good ol' chicken noodle soup...
Ingredients include:
Organic, free range chicken broth
4 whole cloves of garlic
Fresh Ginger
Lemon juice
Lemon Grass Herb
Scallions
Red Miso Paste
Star Anise
Cinnamon
Pepper
Put ingredients in a pot, bring to a boil and then simmer for about ten minutes.
After ten minutes I added, 1 chopped leek, 1 onion thinly sliced and 2 large carrots chopped.
Simmer for 10-20 more minutes.
Serve with fresh basil, lemon and more chopped scallions.
I also added spinach at the last minute.
No measurements...just throw in what you like based on taste! :)
